Goat cheese + beetroot

I see how this one has autumn vibes at least for me. I remember how often my mom made Ukrainian beet salad during 4 months of Ukrainian cold period every ear (November-February) and I don’t know why but this particular sandwich reminds me of that time. So basically there’s only sourdough bread, layer of goat cheese, layer of beet slices, pinch of salt, pepper and some olive oil. Tastes amazing, totally recommend you to consider it instead of a quick ham and cheese sandwich, because now you can easily have cooked beets in almost any supermarket.
